In spite of larger worldwide food harvests in recent years, the number of people in underdeveloped countries without enough food to eat is increasing. Those most likely to suffer from undernutrition are the traditionally vulnerable groups, especially the rural poor. In many underdeveloped countries, the average farm size is smaller, the number of landless farm workers is larger, and the number of rural poor families without land on which to grow food or money to buy it for home consumption is greater than ever before. ⋯ Since unavailability of food is usually the most limiting factor in improving nutritional status of the poor, all agencies dealing with the food chain from production to consumption should be involved. An educational partnership between health, nutrition, and agriculture may be the most important alliance that could be brought into being to ensure enough food for the nutritional well-being of the world's population. This article presents the rationale for education in nutrition in the preparation of agriculturalists and reviews some of the past efforts and present activities of national and international organizations to meld nutrition into agricultural world development programs.

Levels of total iron and available iron were estimated in the diets of individuals 1 year and older. The source of data was 1-day dietary recall records from the U. S. ⋯ When compared with the RDAs, total iron presented a more favorable picture of dietary iron intake than available iron. In relation to the RDAs, proportions of available iron were consistently lower than proportions of total iron. Available iron was lower than total iron in relation to recommended allowances because less than 10% of total dietary iron was available.

Insurance companies have dominated the development of height-weight tables. Initially, tables indicated average weights for insurees, revealing weight gains with increasing age. While pneumonia and tuberculosis were leading causes of death, underweight was considered undesirable because it was associated with those conditions. ⋯ Although stated weights are those associated with the lowest mortality, they are not labeled "ideal" or "desirable". A method for determining body frame size through measurements of elbow breadth is presented. Health care providers should be aware of the latest revisions of these widely used tables, their philosophy, and data source to ensure most suitable use.

The purpose of this research was to study the relationship between role ambiguity and conflict and job satisfaction as perceived by dietitians in the United States. Role ambiguity scores for all dietitians were consistently low. Generalist dietitians, however, scored significantly higher in role ambiguity than dietitians who were heads of departments and dietitians who were in the other/private practice group. ⋯ Yet, for most groups, role conflict scores were only slightly higher than mid-point. Generalist dietitians scored significantly higher in role conflict than did six other groups of dietitians. There were no significant correlations between role ambiguity or conflict and job satisfaction.
