Alcohol is commonly used in almost all parts of the world, and its adverse effects on the liver, central nervous system, and other organs are widely recognized. Less well known are the deleterious actions of alcohol on nutrient metabolism. The purpose of this article is to call attention to the way in which alcohol intake influences the absorption and metabolism of carbohydrates, proteins, and lipids.

The zinc and copper content of seventy-four foods was determined by atomic absorption spectrophotometry. Each of these foods was reported to have been consumed by practicing vegetarians. ⋯ Milk and milk products, including rennetless cheeses, contain small quantities of these minerals. Although many of the foods consumed by vegetarians do contain adequate amounts of zinc and copper, their bioavailability may be limited.

Food acceptability was assessed in forty-eight high schools using alternate methods of menu planning for school lunches. The free-choice pattern resulted in a significant reduction of total plate waste, particularly in the vegetable and salad categories. ⋯ Overall plate waste was 7 and 13 per cent of food service for boys and girls, respectively. The data suggest that a free-choice lunch may be effective in reducing plate waste, particularly for poorly consumed menu items.

Comparative Study
Some determinants of work performance in foodservice systems. Job satisfaction and work values of school foodservice personnel.
Job performance, job satisfaction, and work orientation of 304 women foodservice employees in twenty-four schools in seven districts were examined. Work values and job satisfaction of school and hospital foodservice employees were also compared. Work values varied little between the two groups. ⋯ School employees were divided into high- and low-performance groups through supervisory ratings of six dimensions of performance. The high-performance group had significantly higher satisfaction scores than the low-performance group. The former group had been employed longer and worked more hours per day than the latter.
